Recipe Challenge – July 2018

Makes 8 servings

3 Cups frozen corn kernels
1 Green bell pepper, seeded, diced (should be same size approx as corn kernel)
1 Red onion, finely diced
1 carrot, peeled, diced
1 fresh jalapeno pepper, FINELY chopped

►Read a Series #1 book (tell us the series) – or – a book with a number of small similar items on the cover, like a bunch of stars or a flock of birds, etc. (show us the cover). – Magic in the Wind by Christine Feehan

½ Cup cider vinegar
2 teaspoons chopped fresh cilantro –OR- parsley
Freshly ground black pepper, to taste.

►Read a series half-step book (or as many as are needed to reach at least 150 pages – or – a book that is “fresh”–published in 2018 (tell us when). – Must Love Hellhounds edited by Charlaine Harris

1. Bring water to full boil. Add frozen corn kernels. Remove from heat, cover, wait 3 minutes. Drain and rinse with COLD water to stop cooking. Drain well. (do this at least 2 hours before you assemble salad to make sure corn is dry)

Read a book set in a location that starts with a letter in COLD (tell us where) – or – read a book with a “3” in the ISBN number. – Mortal Sins by Eileen Wilks

2. Mix together the corn, bell pepper, onion, carrot and jalapeno pepper in a medium bowl.
3. Add vinegar, cilantro (or parsley), and black pepper. Toss to mix.
4. Cover the bowl and refrigerate the salad until serving time (will keep well for a day … just remix before serving)
